Pantry

Local produce from Margaret River doesn't all come off a tree. Some of it comes out of a kitchen with a window. At the Margaret River Fudge Factory on the main street, you can watch fudge being mixed, poured and cut, as the family has done by hand since 1999. At Bettenays in Cowaramup, the nougat kitchen has a viewing window too.

For the cheese board, Margaret River Food Company is run by a chef, Paul. It began in 2013 with an onion jam and now makes quince paste, kasundi and three kinds of pickled onion. Providore packs olives from its own grove with chilli and lemon, and Eagle Bay Olives makes an Egyptian-style dukkah for dipping. For salads and pasta, Vasse Valley Hemp Farm at North Jindong sells a nutty, cold-pressed hemp seed oil.

Further out, the South West's truffle country turns a short winter harvest into jars. Truffle Hill at Manjimup makes truffle salt, oil and mustard, and Farm Fresh Truffles in the Pemberton region a black truffle sea salt. Our Southern Forests day trip covers that end of the map.
