Margaret River Food Company
Dukkah is a dry blend of roasted nuts, seeds and spices, coarsely ground so it keeps some crunch rather than turning into a powder. The usual way to eat it is the simplest: bread dipped first into olive oil, then into the dukkah, though it also works scattered over eggs or roast vegetables.
This one is hand-made by Margaret River Food Company, run by chef Paul in Margaret River, Western Australia, where the business also makes its own extra virgin olive oil under the same name. The company started in 2013 as Hann Jam, before rebranding in 2016 as its pantry range of jams, pastes, pickles and relishes grew.
Put a jar on the table when people are over, since it needs no cooking at all.
