Margaret River Food Company
Quince paste, sometimes called membrillo, is made by cooking quince fruit down slowly with sugar until it sets firm enough to slice rather than spread. It is a classic partner for cheese, traditionally cut into thin slabs and served alongside something hard and salty, such as an aged cheddar or a firm sheep's cheese.
This one is hand-made by Margaret River Food Company, run by chef Paul in Margaret River, Western Australia, part of a range of fruit pastes that also includes Pear & Cardamom and Apple Ginger & Sage. The business began in 2013 as Hann Jam, known first for its onion jam, before it grew into the wider pantry range it makes today.
Slice it thin for a cheese board, or melt a spoonful into a pan sauce to sit under roast pork or lamb.
