Almond & Sea Salt pairs Bahen & Co's 75% dark chocolate with almonds the maker says are slow-roasted in its own farm-grown olive oil, finished with hand-harvested sea salt. The almonds add crunch against the dense, stone-ground chocolate, and the salt keeps the whole bar from tipping too sweet.
It is made on the Bahen family farm near Margaret River, Western Australia, where Jacqui and Josh Bahen grow their own olive oil and grind their chocolate on a stone melangeur dating from around 1910. The 75% cacao matches the two single-origin bars in the range, Papua New Guinea and Guatemala.
It is an easy way into dark chocolate for someone who finds a plain bar a bit austere, or a square to have with a coffee mid-afternoon.
