Chocolate

Margaret River chocolate is made in two ways. Some of it starts with the raw cacao bean. At Gabriel Chocolate in Metricup, beans are sorted by hand, roasted, winnowed down to nibs, then ground and refined. Each origin gets its own bar, so a Peru and a Ghana side by side taste of the bean, not the recipe. Gabriel says it was the first maker in WA to work this way.

Jacqui and Josh Bahen of Bahen & Co make theirs on the family farm near Margaret River. They roast on a 1930s roaster and stone-grind on a melangeur from around 1910, running both slow and cool. There are no published visiting details, so order from their site.

The other way is the chocolatier's craft. In Cowaramup, Roz and Georgia of Temper Temper hand-temper 50 g bars and coat figs, almonds and more in chocolate. Our Margaret River chocolate trail links the makers up in an afternoon. In summer, bring a cooler bag.
