House Blend at 88% cacao is the darkest bar in Bahen & Co's range: the same stone-ground blend of single-plantation cacaos as the 70%, taken further into bitter, cocoa-forward territory. It is a bar for people who want their dark chocolate dark, with only cocoa beans and raw sugar in the ingredient list.

Jacqui and Josh Bahen make it on the family farm near Margaret River, Western Australia, grinding the cacao slowly on a melangeur dating from around 1910 and roasting it on a 1930s Barth Sirocco roaster, both run at low heat and low speed. The company says it works directly with cacao farmers, without intermediaries, and pays above Fair Trade pricing.

Save a square for the end of a meal, grated over dessert or eaten slowly on its own.
