House Blend is the everyday bar at Bahen & Co: a blend of single-plantation cacaos stone-ground to 70% cacao, made from just cocoa beans and raw sugar. Stone-grinding is a slower process than most modern chocolate making, and it shows in a smooth, dense square that takes its time to melt.
Jacqui and Josh Bahen, former vignerons, make it on the family farm near Margaret River, Western Australia, using a Barth Sirocco ball roaster from the 1930s and a Guitard melangeur from around 1910, both run slow and cool rather than at a modern factory's pace. The company says it works directly with cacao farmers, without intermediaries, and pays above Fair Trade pricing.
Keep a bar in the pantry and break off a square or two after dinner, when there is nothing else on the plate.
