Chilli and Salt takes Bahen & Co's House Blend chocolate and adds two things: flame-roasted chilli and a dusting of flaked sea salt. The heat builds slowly behind the cocoa rather than hitting first, and the salt lifts it at the end. It belongs to a small flavoured range that also includes almond and sea salt, built on the same stone-ground base.
Like the whole range, it is stone-ground on the Bahen family farm near Margaret River, Western Australia, using vintage machinery that includes a melangeur from around 1910, run slow and cool. Jacqui and Josh Bahen, who describe themselves as former vignerons, say they work directly with cacao farmers and pay above Fair Trade pricing.
Break it out next to a cold drink on a warm evening, when a little heat is welcome.
