These are pickled onions in a honey-sweetened vinegar brine, so the usual pickled-onion sharpness is rounded out with a little sweetness rather than left purely sour. They are one of three pickled onions Margaret River Food Company makes, sitting next to a Spiced version and a Chilli version on the same shelf.
The business is run by chef Paul in Margaret River, Western Australia, and the pickles are hand-made in the same kitchen as the company's jams, pastes and relishes. It began in 2013 as Hann Jam, known for its onion jam, before rebranding to Margaret River Food Company in 2016 as the range grew around it.
Put a few out on a ploughman's plate with cheese and bread, add them to a grazing board, or eat them straight from the jar while deciding what to cook.
