El Kapo Hot Sauce

Jerk is Jamaica's great barbecue seasoning, traditionally built on allspice, thyme and hot chillies, and a good jerk sauce is salty, sweet, peppery and sharp all at once. El Kapo's version hits all four, with plenty of citrus to lift it and keep it bright.

El Kapo is made in Margaret River, Western Australia, by a chef with about twenty years in professional kitchens, whose interest in cooking began in New Orleans. He uses home-grown chilli, herbs and citrus with produce from around Margaret River, and every sauce is built for flavour over heat. You can find all eight at the stall at the Margaret River Farmers Market on Saturdays.

Rub it over chicken thighs before they go on the barbecue, or splash it into a pot of rice and beans.
