Original Hot Sauce

Original is where El Kapo began: a hot, sweet chilli sauce packed with herbs and spices, based on flavours the chef found in New Orleans, where his interest in cooking started. It's made for flavour first, so the heat arrives with the herbs rather than instead of them.

El Kapo is made in Margaret River, Western Australia, by a chef with about twenty years in professional kitchens. The chilli, herbs and citrus are home-grown, the rest of the produce comes from around Margaret River, and each sauce aims for a balance of salt, sweetness and tang. There are eight sauces now, and you'll find the stall at the Margaret River Farmers Market every Saturday.

Shake it over scrambled eggs, into a pot of gumbo, or over fried chicken on a Friday night.
