El Kapo Hot Sauce

El Kapo is a hot sauce made in Margaret River by a chef with about twenty years in professional kitchens. His interest in cooking began in New Orleans, and the first sauce he bottled, the Original, is built on the flavours he found there.

The chilli, herbs and citrus are home-grown, and the rest of the produce comes from around Margaret River. The aim is flavour over heat: each sauce balances salt, sweetness and tang, so the chilli is part of the taste rather than the whole point. The lime in the Mango & Lime comes off the maker's own dwarf lime tree.

There are eight sauces. They run from fruit blends such as Mango & Lime and Smoked Pineapple & Ginger, through a smoky roast garlic and chipotle and a Caribbean jerk, to one made deliberately, seriously hot.
