Kasundi started in Bengal as a pungent mustard relish, and the versions made in Australia are usually spiced, cooked-down relishes with a bit of heat. More 2 Relish makes one with eggplant, which cooks down soft and soaks up spice, and spells it Kusundi on the label. It's one of the top sellers at the stall.
Sheridan makes it in Margaret River, Western Australia, a small batch at a time in a registered home kitchen, and labels every jar herself. The stall trades at weekend markets from September to July, on Sundays at Town Square Markets in Margaret River and on Saturdays in Bunbury and Dunsborough.
Serve it with a curry, dollop it beside grilled lamb, or stir it through thick yoghurt for a quick dip.
