Cranberry and pistachio brings a tart, dried-fruit edge to Bettenays' nougat: pistachios the maker says come from local Perth farmers, with oven-dried cranberries, set through a base of South West-sourced honey. The red fruit and green nut make an obvious pair, tart against sweet, a contrast the honey and almond bar doesn't have.
It is made on site in Cowaramup, Western Australia, in the same kitchen behind the viewing window where all of Bettenays' nougat is mixed and cut, with free nougat samples for visitors. It sits among dozens of flavours the business makes at the one site.
A 180g bar like this one travels well, so keep a spare for a gift, or for the trip home when the honey and almond bar is already gone.
