Honey and toasted almond is the classic combination nougat has always been judged on, and it is the flagship bar at Bettenays. South West honey and toasted almonds are set together and balanced with French vanilla bean, then wrapped in edible Dutch rice paper, giving a chewy, not sticky, bite.
Bettenays makes its nougat on site in Cowaramup, Western Australia, in a kitchen with a viewing window so visitors can watch the bars being made, with free nougat samples offered on the spot. The nougat side of the business runs alongside a much longer flavour list that changes from time to time.
