Simmo's Ice Creamery
Honeycomb ice cream is all about the crunch, and Bees' Knees has plenty of it: whole pieces of honeycomb folded through a caramel ice cream. Honeycomb is the golden, glassy kind that shatters first and then turns chewy as it sits in the cold, so the texture changes as you eat.
Simmo's Ice Creamery started on Commonage Road near Dunsborough, Western Australia, in 1993, with a father-and-son team, a recipe from Ireland and a machine that made two tubs per batch. Today there are about 60 flavours, made with local full-cream milk, and chunks of honeycomb turn up again on top of the maker's ice cream cakes.
Pile it into a cone after a swim at Meelup, or serve it with warm chocolate sauce when there's a crowd in for dessert.
