Simmo's Ice Creamery
Burnt caramel ice cream is caramel taken a step further, cooked until it turns dark and faintly bitter, which keeps the sweetness in check. Simmo's runs a salted caramel ribbon through it, so each scoop swings between the deep, toasty base and a sharper, saltier streak. The maker counts it among its most asked-for flavours.
It comes from Simmo's Ice Creamery on Commonage Road near Dunsborough, Western Australia, where a father and son began making ice cream in 1993. The cabinet now holds about 60 flavours, from the classics to the maker's own ideas like this one, all made with local full-cream milk.
Have it in a cone after a round of mini golf at the fun park on the same block, or keep a tub in the freezer for pudding on a cold winter night.
