Simmo's Ice Creamery
Mango sorbet lives or dies on the fruit, and this one is made from pureed Australian mangoes rather than a flavouring. There's no milk or cream in it, so it tastes sharper and brighter than a mango ice cream, with the fruit's own sweetness and the faintly resinous edge a ripe mango has.
Simmo's Ice Creamery has been making ice cream on Commonage Road near Dunsborough, Western Australia, since 1993. Alongside about 60 flavours made with local full-cream milk, it has built a dairy-free range: several sorbets like this one, plus coconut-cream ice creams in chocolate, mango and salted pistachio.
It's the scoop for a hot January afternoon when something creamy feels like too much. At home, serve it with slices of fresh mango and a squeeze of lime.
