Plum Lavender & Black Pepper Jam is a fruit preserve built around an unusual pairing: sweet plum against the perfume of lavender and a warm kick of black pepper. It sits somewhere between a breakfast jam and a cheese-board condiment, depending on what you spread it on.
It's hand-made in small batches in the kitchen on Providore's Margaret River property, alongside the same team's curds, chutneys and relishes. The property also grows its own olives, keeps bees for honey and chickens for eggs, and tends a half-acre vegetable garden, so the kitchen rarely has to look far for ingredients.
Spoon it over a wedge of soft cheese to serve with drinks, brush it on lamb or pork as a glaze before roasting, or spread it on toast at breakfast.
