Manjimup truffles grow out of sight, underground beside the hazelnut and oak trees they live with. Tourism WA calls Manjimup and Pemberton the leading black truffle producer in the southern hemisphere. Depending on conditions, the harvest runs from early June into September.

In 1997, Truffle Hill planted its first hazelnut and oak trees at Manjimup, inoculated with black Périgord truffle. It chose the site for its cool climate and soils, then waited six years for the first truffle. The estate now covers 52 hectares among the karri, with more than 55 km of hazel and oak rows. During the winter harvest, trained dogs find the truffles.

A fresh truffle belongs to a few cold months. A jar doesn't, and that's the point of the pantry range: truffle oil, truffle honey, truffle mustard and truffle sea salt flakes.
