Truffle Hill
Truffle oil is extra virgin olive oil carrying the scent of black truffle right through it, made from oil pressed in the Donnybrook region and infused with pieces of the estate's Black Périgord truffle. A few drops are usually enough: stirred through potato, pasta or risotto rather than used for cooking, so the truffle scent survives the heat.
Truffle Hill planted its first trees at Manjimup in 1997, choosing the district for its cool climate and soils, and dug up its first truffle six years later, in 2003. The estate has grown to 52 hectares among the karri forests of the Southern Forests region, where trained dogs find the truffles each winter.
Keep a small bottle in the pantry for the night mashed potato needs to feel like more than a side dish.
