Truffle Hill
Truffle honey starts as Western Australian bush honey, then takes on the smell and taste of the farm's own black truffle steeped through it. It's sweet first, with truffle arriving as a low, savoury note underneath, more at home next to cheese than stirred into tea.
Truffle Hill has grown black Périgord truffles at its Manjimup estate since 1997, on land chosen for its cool climate and soils among the karri forests of the Southern Forests region. Truffles are dug from the ground with the help of trained dogs, and only during the winter harvest.
Try it on a cheese board in place of plain honey, drizzled over roast vegetables, or rubbed onto lamb before it goes in the oven.
