Truffle Hill
Truffle mustard starts as a French-style Dijon, sharp and smooth, then picks up the low, earthy note of the farm's own black truffle running through it. Truffle Hill describes it as having a mild heat and a distinctive taste, closer to a good Dijon than anything sweet.
It comes from the same Manjimup estate that has grown black Périgord truffle since 1997, on 52 hectares among the karri forests of the Southern Forests region, where the truffles are found each winter by trained dogs working the ground. The mustard is one way the farm gets that short season into a jar that lasts the rest of the year.
Spread it thin on a ham sandwich, whisk a spoonful into a dressing, or set it on the table next to a good steak.
