Redgum Honey Crunch is honeycomb toffee made with honey from marri, the West Australian redgum. It breaks with a clean snap, then dissolves on the tongue, and the maker's tasting note for the honey is a hint of apple, berry and sweet spice.
Candy Cow makes its honeycrunch in the shop in Cowaramup, in front of visitors, using Western Australian honey. Sugar, glucose and honey are cooked to a toffee, bicarbonate soda goes in, and the mixture foams up into an airy, golden slab that is broken into pieces. The online range is sorted by the honey in each bag, and going by the maker's notes, redgum is the one with fruit and spice in it.
Open a bag on the drive home, or post one to someone who misses the South West. Keep it sealed: honeycomb turns sticky in damp air.
