Salted caramel is a fudge-counter classic, and Candy Cow keeps it simple: caramel fudge with salt. The salt sharpens the caramel and keeps the sweetness in check. Classic fudge is sugar, butter and milk cooked to the soft-ball stage, then beaten as it cools so the sugar sets in fine crystals, which gives it that smooth, slightly crumbly bite.
The fudge is Candy Cow's own, made to recipes the maker says are unique to the shop, in dozens of flavours from vanilla and caramel cream to fairy floss and bubblegum. The maker labels this one gluten free. Candy Cow is a sweet shop on the main road through Cowaramup, Western Australia, where it makes honeycrunch in front of visitors, and it sells its fudge online by the piece.
