White Gum Honey Crunch is honeycomb toffee made with honey from wandoo, the pale-barked West Australian eucalypt known as white gum. The maker describes the honey as thick, with a light toffee flavour of its own, which suits a sweet that is toffee already.
Candy Cow makes its honeycrunch in the shop in Cowaramup, in front of visitors, with Western Australian honey. Sugar, glucose and honey are cooked hot, then bicarbonate soda goes in, the pot foams, and the mix sets into a crisp, golden slab full of air bubbles. The shop sorts its online range by the honey, so you can line up two or three bags and taste the difference.
Share a bag at the beach, or post one to someone who grew up on corner-shop honeycomb. Keep it sealed so it stays crisp.
