Cambray Cheese
Blackwood Blue is Cambray's one blue cheese, and it's made from cow's milk. Blue veins run right through it, and the texture sits between creamy and crumbly, with a sharp, salty bite near the veins and a smoother, milder cream around them. It shares its name with the Blackwood River, which winds through the Nannup district.
Cambray makes it on the family farm at Cundinup, near Nannup, Western Australia, with milk from Walsall Dairy at Acton Park, near Busselton. The farm began with sheep, and the Wilde family added cow's milk cheeses after Jane and her son Tom had worked out their sheep's milk styles, with advice from a Dutch cheesemaker friend. The range now runs past 20 cheeses, and this is the only blue.
Crumble it over a pear and walnut salad, or melt a little over a steak.
