Nougat & Nice

Panforte is the dense, chewy cake from Siena in Tuscany, less like a sponge and more like a slab of fruit, nuts and spice held together with honey. Nougat & Nice makes its own version with honey, dark chocolate, dried fruit, almonds and warm spices, so it sits somewhere between a cake and a confection.

It comes from the same kitchen as the nougat. Pastry chef Sarah Sorensen started Nougat & Nice in Bunbury, Western Australia, in 2016, and everything is still made in the business's own kitchen in the South West. The factory outlet in East Bunbury is open to the public, and a share of its sales goes back to local community groups, clubs and schools.

Slice it thin with coffee after Christmas lunch, or serve it beside a hard cheese.
