Nougat & Nice

Fig and raspberry give nougat a jammy, fruity side. The figs are sun-dried and chewy, the raspberries are sharp enough to cut through the honey, and roasted almonds bring the crunch. It's one of the Nougat & Nice flavours that shows how far past the classic the range goes.

Nougat & Nice was started in Bunbury, Western Australia, in 2016 by pastry chef Sarah Sorensen, who worked out a honey-heavy nougat recipe of her own. It's still made in the business's own kitchen in the South West. The factory outlet in East Bunbury is open to the public, and a share of what's sold there goes back to local community groups, clubs and schools.

Put it on a cheese board beside a wedge of blue, or cut it into cubes for a Christmas platter.
