Cambray Cheese

Farmhouse Gold is the cheese Cambray calls its signature, and it's made from the milk of the family's own sheep. Sheep's milk makes a fuller-bodied cheese than cow's milk, and this one is buttery and matured. At the 2026 Perth Royal Food Awards it was named Champion Buffalo, Camel, Goat or Sheep Milk Product.

The flock lives on the Wilde family's farm at Cundinup, near Nannup, Western Australia. Jane and Bruce Wilde brought in three East Friesian milking sheep in 1997 and spent years breeding a flock for milking. Sheep give milk in season, roughly spring to late summer, so supply varies through the year.

Cut it into wedges for a picnic board, with ripe pear and a handful of walnuts.
