Cambray Cheese
Washed Rind Brie is the cheese that won the room. At the 2026 Perth Royal Food Awards it took five champion titles. It's a soft cow's milk cheese whose rind is washed as it matures, which is what gives a washed-rind cheese its orange-tinged crust and its big aroma. Inside it stays mild and creamy, so the smell is braver than the taste.
Cambray makes it on the family farm on the Vasse Highway near Nannup, Western Australia, with milk from Walsall Dairy, a family dairy at Acton Park near Busselton. The Wildes have been making cheese there since 2005, in a factory Bruce Wilde and his son Tom built themselves.
Take it out of the fridge an hour before serving, and put it on a board with crusty bread and quince paste.
