Hakea Honey Crunch is honeycomb toffee made with honey from hakeas, the native shrubs that belong to the same family as banksias and grevilleas. The maker calls the honey light, with a sweet citrus scent, which makes this the gentlest bag in the range.
Candy Cow makes its honeycrunch in the shop in Cowaramup, in front of visitors, using Western Australian honey, and each day's flavour is made during a show, so it can be bought fresh. The method is the old one. Sugar, glucose and honey are cooked to a toffee, bicarbonate soda makes it foam and rise, and it sets crisp and airy before it is broken up.
Crumble a few pieces over vanilla ice cream, or hand the bag around the car on the way home. Keep it sealed, or it will soften.
