Eagle Bay Olives
Dukkah is an Egyptian-style blend of roasted nuts, seeds and spices, coarse rather than smooth, meant for dipping and scattering rather than spreading. Eagle Bay sells it in small and medium jars and suggests it over salads, soups and roasted vegetables, or pressed onto meat or fish as a crust before cooking.
It comes from the same family-run grove at Eagle Bay, on Cape Naturaliste Road, Western Australia, that has grown olives here since 1998, across more than 1,200 trees and seven varieties. The farm sells its own olive oil too, so the classic routine of bread into oil, then into dukkah, more or less makes itself.
Set a jar out with warm bread when visitors call in, and let people help themselves.
