Icon Honey
Blackbutt and redgum honey is a summer blend of two south-west eucalypts, both flowering in the warm months. Icon Honey puts them together on purpose: the redgum, or marri, gives the dark blackbutt a bit of pepper and a plum-skin tartness, so the sweetness has something to push against.
Icon Honey gathers this one from farms near Manjimup, Yallingup, Harvey and Dwellingup. The family places hives in native bush by arrangement with farmers, and works with other beekeepers where it can't reach a forest itself. The honey is extracted and packed at their property near Dunsborough, Western Australia. Empty jars can go back to be cleaned and refilled, with a new lid and label.
Pour it over a bowl of ricotta and torn figs, or use it to sweeten a pot of chai on a winter afternoon.
