Karri Honey

Karri honey is light golden, and Icon Honey calls its flavour soft and sweet, the kind that doesn't shout over whatever it's spread on. It comes from the blossom of the karri, the tall, pale-trunked eucalypt of the southern forests. Icon Honey says the tree flowers only every seven years, mostly from December or January into April, which makes a good karri season something to wait for.

This jar comes from farming properties near Northcliffe and Pemberton. Icon Honey works with farmers who let the family into their native bush, and with other beekeepers where it can't reach a forest itself. The honey is extracted and packed at the family's property near Dunsborough, Western Australia, and each jar has a batch code on the base that traces it to its source.

The maker suggests it on crumpets and waffles, where a mild honey lets the butter do its job.
