Jarrah Honey

Jarrah honey comes from the jarrah, a hardwood eucalypt that grows nowhere but Western Australia and flowers on its own terms: heavily in a good season, barely in others. This jar is from hives in the forest around Pemberton. Expect a dark honey with some grip to it. The maker's tasting notes mention dried fruit, caramel and a tannic, slightly tart edge, closer to strong tea than to sugar.

South West Honey belongs to brothers Ryan and Steve, who started as weekend beekeepers and have run the business since 2017. Each honey comes from a single area and is never blended with another. It is extracted cold, below 40°C, and filtered as little as possible.

Warm a spoonful through a tray of roasting pumpkin, or put the jar out with the cheese board after dinner.
