Foragers Honey
Jarrah honey comes from a single floral source, the blossom of the jarrah tree, and the maker notes that jarrah is unique to South West Australia and flowers only every two to three years. It is golden in colour and slow to set in the jar.
Foragers Honey is a family-operated beekeeper based at Barrabup, near Nannup, Western Australia, keeping hives at permanent sites across the South West rather than moving them to chase the flowering. The business says it uses no chemicals on its bees or hives, and that it takes only the honey the colony does not need. Because the hives stay put, each year's Jarrah follows what the forest does.
Because it stays runny for longer, it is easy to drizzle over toast or warm porridge, or to stir into a marinade or dressing.
