Karri honey is light in colour, with a smooth butterscotch flavour that makes it an easy everyday jar. It comes from the blossom of the karri, the tall pale-barked eucalypt of the southern forests. The maker says the karri flowers heavily only once every five to ten years, so a big karri harvest is not a yearly event.
Pemberton Honey Co is Mikey and Allexa Cernotta's business, run from the farm they set up in 2015 just outside Pemberton, Western Australia. The farm sits on the edge of the karri forest, and this honey comes from karri country between Denmark and Pemberton. It is processed and packed on the farm, in the shed built for the job.
Drizzle it over pancakes, stir it into tea, or post a jar to someone who misses the big trees of the South West.
