Peppi Honey

Peppi honey comes from the peppermint tree, Agonis flexuosa, the weeping tree with peppermint-scented leaves that lines the streets and beaches around Busselton and Dunsborough. Its honey is tangy, with a peppermint flavour that surprises anyone expecting plain sweetness. Icon Honey likens its oddness to Tasmania's leatherwood honey. The peppermint flowers over a long season, from spring to late autumn.

Icon Honey gathers this one from farms around Cape Naturaliste and Siesta Park, not far from home. The family extracts and packs its honey at their property near Dunsborough, Western Australia, and runs a tasting gallery inside Happs Pottery at Anniebrook. A batch code on the base of each jar tells you where your honey came from.

Whisk it with orange juice and olive oil for a salad dressing, as the maker suggests, or post a jar to someone who misses the Geographe Bay foreshore.
