Icon Honey
Wildflower honey is the one that changes. Icon Honey's bees head north each autumn to country between Bindoon and Green Head, near Beekeepers Reserve, where native flowers are thick on the ground. The honey that comes back has a distinct floral flavour that shifts from year to year with whatever the bees found, and it may crystallise in the jar.
Icon Honey is a family business based near Dunsborough, Western Australia, where the honey is extracted and packed. It began with one hive, and today the family moves hives around the state, always at night, when the bees are home. The tasting gallery is inside Happs Pottery at Anniebrook, and the batch code on each jar's base traces the honey to its source.
Stir a little into a pot of herbal tea, fold it through a fruit salad, or make it the everyday jar for baking.
