South West Honey

Raw honeycomb is honey as the bees left it, sealed in wax cells and never extracted or filtered. South West Honey's bees build this comb inside the cassette itself, so it arrives capped with fresh wax, ready to cut. The wax is edible: chew it until the honey is gone, then swallow it or set it aside. The flavour depends on what was flowering when the bees filled it, so no two are the same.

It comes from hives in the Pemberton region of Western Australia, kept by brothers Ryan and Steve, who have run South West Honey since 2017. Store it at room temperature and out of the sun; the fridge turns the honey inside hard and grainy.

Set it on a cheese board with aged cheddar or manchego, sliced pear and fig, or serve it with blue cheese and walnuts as a simple dessert.
