Pemberton Honey Co
Hakea honey is light in colour, with a medium body, a citrus aroma and a lemony finish. Hakeas are hardy native shrubs, related to banksias and grevilleas. It is a bright, fresh-tasting honey, and an easy start for anyone who finds the darker types too strong.
Pemberton Honey Co's own bees make this one, working three species of hakea through autumn and winter. Mikey Cernotta runs the bees, and the business moves its hives between nectar flows around the state so there is forage all year. Every jar is processed and packed on the farm he and Allexa Cernotta run just outside Pemberton, Western Australia.
Drizzle it over ricotta on toast or a bowl of berries, or stir it into the syrup for a lemon cake.
