Pemberton Honey Co
Wandoo honey is thick, with toffee and caramel flavours and a touch of acidity to lift them. Wandoo is also called white gum, after its smooth white bark, and it grows in drier woodland east of the jarrah forest. It pours slowly from the spoon.
Pemberton Honey Co is run by Mikey and Allexa Cernotta from their farm just outside Pemberton, Western Australia, where Mikey is head beekeeper. The maker gives the nectar source for this honey as wandoo country between the Brookton Highway and Cranbrook. Every jar is then processed, packed and checked in the purpose-built shed back on the farm.
Warm it into a glaze for roast carrots or pumpkin, or spread it thickly on hot buttered toast.
