Parrot bush honey is dense and dark, with a savoury edge and notes the maker likens to dried apricot and warm spice. Parrot bush is a prickly, cream-flowered banksia that grows on sand and limestone along the coast. It is a bolder jar than the pale forest honeys.
Its nectar comes from the coastal plain north of Perth, well beyond the South West. The honey is then processed and packed by Pemberton Honey Co on Mikey and Allexa Cernotta's farm just outside Pemberton, Western Australia. The business is migratory, moving its hives onto nectar flows across the state, and it also packs honey from a small number of beekeepers it knows.
The maker suggests a cheese board, so set it out beside a sharp cheddar or a creamy blue.
