The story

A family honey business with a tasting gallery inside Happs Pottery at Anniebrook, near Dunsborough, packing single-variety WA honeys by batch.

Icon Honey is a family business run from a property near Dunsborough, where the same family also runs Happs Pottery. The honey is extracted, packed and labelled there, and the tasting gallery sits inside the pottery on Caves Road at Anniebrook, next to a live beehive.

It began with one hive. Myles took up beekeeping, one hive became two, then four, and in time a truckload. The first jars went on sale from the pottery shopfront under the name Nude Honey, for honey kept raw and unfiltered.

Over the years the family came to see how much the forest shapes the flavour, so they set up arrangements with farmers who let them place hives in their native bush. Where they can't reach a forest themselves, they work with other beekeepers who can. Hives are moved at night, when the bees are home. Jacquie says Myles drives with his eyes on the treetops, reading the blossom.

The range is named for the trees and the country: karri from near Northcliffe and Pemberton, peppi from farms around Cape Naturaliste and Siesta Park, blackbutt from Manjimup to Dwellingup, mallee from Hyden, wildflower from north of Perth. Each jar carries a batch code on its base that you can enter on the maker's site to see where that honey came from. Jars are 250g, 450g or 900g, and empty jars can go back to be cleaned and refilled.
