Icon Honey
Blackbutt honey is dark and forthright, the jar to reach for when a milder honey disappears into whatever it's on. The sweetness comes first; then, as Icon Honey describes it, caramel builds at the back of the palate, with something like molasses underneath. It comes from the blackbutt, a big south-west eucalypt that flowers from around November to February.
Icon Honey gathers it from farms at Manjimup, Yallingup, Harvey and Dwellingup. It is a family business: Myles started with a single hive, and the hives kept multiplying until they filled a truck. The honey is extracted and packed at the family's property near Dunsborough, Western Australia, and you can taste the range at the gallery inside Happs Pottery at Anniebrook.
Melt it into the butter for a batch of Anzac biscuits, or spoon it over grilled haloumi.
