Redgum (Marri) Honey

Redgum honey is marri honey, from Corymbia calophylla, the red-barked gum whose cream blossoms and big gumnuts turn up all over the South West. When conditions suit it, marri flowers heavily. Of South West Honey's three forest honeys, this is the easy-going one: paler than the jarrah, with a floral lift and nothing that fights other flavours in a recipe.

South West Honey is run by brothers Ryan and Steve from Pemberton, Western Australia. They keep between 300 and 500 hives in native forest around Pemberton and across the south west, and never blend one honey with another. The honey is extracted cold, below 40°C, and filtered as little as possible. Raw honey can set in the jar; stand it in warm water and it runs again.

Bake it into a honey cake, or stir it into a pot of black tea.
