Petra Olive Oil
Lemon olive oil made in the Italian agrumato style starts with whole lemons pressed with the olives, rather than flavour stirred into the oil later. The peel goes through the press too, so oils made this way carry the scent of fresh zest. The maker describes this one as strongly lemony, so a little goes a long way.
The Somas family set up Petra in 1999 as a small olive grove at Yallingup Siding, under ten minutes' drive from Dunsborough, Western Australia. Dams sit among the olive trees, and kangaroos often wander through. The range also runs to lime, herb, garlic and chilli oils.
Brush it over fish on the barbecue, spoon it over a roast chicken while it rests, or dress a simple green salad with nothing else.
