Petra Olive Oil

Petra is the Greek word for rock, and here the name is literal. When the Somas family dug a dam on their olive property at Yallingup Siding, the granite that came out of the ground went into the walls of the estate's chalets. The family set up the grove in 1999, under ten minutes' drive from Dunsborough.

The olive trees share the estate with lakes formed by its dams, and kangaroos are regular visitors. The olives are harvested and cold pressed into extra virgin olive oil, which the maker sells as a blend. The oil on sale now is labelled as the 2025 oil, in 500ml bottles and 2.5 litre tins.

The flavoured oils are made two ways. For the lemon and lime oils, the whole citrus goes through the press with the olives, so fruit and oil come out together rather than being mixed later. The herb, garlic and chilli oils take the slower route, with the flavourings left to infuse in the estate's oil over several days. There is also Black Oil, which the maker calls its own invention: Kalamata olives made into a paste and blended through the oil.

The shelf goes beyond oil to balsamic vinegars, jams, relishes and a chutney. There is also a haircare and body range made with the estate's olive oil.

The family runs farm-stay chalets on the estate, and a shop in Claremont, Perth. The online shop sends orders within Australia. The maker doesn't list farm-gate hours at Yallingup Siding, so check its site before visiting.
