Petra Olive Oil

Lime olive oil from Petra is pressed from limes and olives together, so the fruit is in the oil from the first crush. Lime tends to taste greener and more aromatic than lemon, with a zesty edge that sits well with chilli, coriander, ginger and fish sauce. Keep it for finishing food rather than frying, so the lime stays bright.

Petra's grove sits at Yallingup Siding, near Dunsborough in Western Australia, where the Somas family set it up in 1999. Its sister oil, lemon, is made the same way. The herb, garlic and chilli oils take longer, with the flavourings left to infuse in the estate's extra virgin oil for several days.

Follow the maker's lead and spoon it over avocado on toast, or shake it through an Asian-style salad of cabbage, mint and peanuts.
